Hi everybody, these are two recipes for yummy dishes by my mom. Enjoy! 🙂

Spaghetti with Scallop Tomato Sauce

Serves 4

2 tbs olive oil
2 large garlic cloves, minced
1 can (about 2 pounds) whole tomatoes, crushed with fingers, with juices

Salt and pepper to taste

1 tbsp chopped fresh parsley leaves

2 tbsp fresh shredded basil leaves

12 shelled giant scallops

1 pound spaghetti or similar pasta

Freshly grated Parmesan cheese

Heat olive oil, add the garlic and sauté till light brown. Add the tomatoes,  bring to a boil over medium-high heat. Add salt, pepper, parsley, basil. Boil until reduced slightly, about 5 minutes. Add the scallops and cook for 5 minutes.

Meanwhile, cook the pasta according to package directions for al dente. Drain and add to the sauce, mix, serve and garnish with some fresh basil and grated cheese.


Corned beef Spaghetti 

250g of pasta
2 cloves of Garlic (chopped)
1/4  of an onion (chopped)
1/2 can of canned beef (small can)
Pepper 1/4 tsp
Salt (pinch)
Olive oil 1 tbsp
Basil leaves (optional)
Grated cheese (optional)

1. Boil pasta according to the instructions till Al dente
2. Heat oil and add  chopped onion and garlic and saute till light brown, then add corned beef and mix
3. Add cooked pasta, salt and pepper
4. Serve and garnish with basil leaves and grated cheese.
